Long Huynh accepted the challenge of taking over the varied and extensive menu when he bought the establishment in 2005. People tell him that they prefer the ribs at Capers over the ones at the most famous rib places. While he's flattered by the compliment, he's too busy perfecting his touch for everything else he serves to let it go to his head. He makes all his own sauces for his ribs and pastas, using no chemicals or preservatives.
